Mississippi meets Louisiana when I play tomorrow (Sat. Jan. 31) at EaT, a cool new oyster-and-absinthe bar at 3808 N. Williams Ave. Music runs about 7:30-10 p.m. The restaurant got reviewed favorably in today’s Oregonian. Although I think the review didn’t pay enough attention to the absinthe — you choose among varieties from California, Oregon, Switzerland and France, each served with an elegant setup for slowly dripping water onto a sugarcube, cradled in a slotted spoon that drips sweet water into your beautiful stemmed glass, changing the look of the pale-green drink and creating a heady herbal aroma. Finally you take a sip and you are transported back to 19th-century New Orleans or maybe Paris. Come with friends and try several different absinthes!
